João da Vila Velha, as we know it, is born from the dedication and resilience of one who learns by doing. Ingenuity, sharpened by necessity, opened the way for both spoon and imagination. The person who lends it his name also gives his body and soul to the house, bringing to the table an extensive variety of homemade and distinct flavours, in a happy marriage between traditional Portuguese cuisine and pure spontaneity. He diversifies, architects, and serves in each dish a passion that is felt: savouring.

MOORISH CHICKEN


- 1 chicken (approximately 3kg)

- 1 tablespoon cinnamon powder

- 1 teaspoon turmeric

- 1 coffee spoon powdered ginger

- 1 large, chopped onion

- 5 chopped garlic cloves

- 200ml of beer

- 500ml white wine

- 200g bacon

- 100g bacon

- 100g butter

- 800g chickpeas

- juice of 2 lemons

- aromatic herbs to taste (thyme, rosemary, mint)

- 1 poached egg/person

- fried bread

- fresh coriander or parsley, to decorate

PREPARATION:

1 – Cut the chicken into small pieces, place in a large bowl and season with cinnamon, saffron and ginger. Add beer and wine and mix well. Reserve.

2 – In a pot over low heat, place the onion, garlic, bacon, bacon, and butter. Allow to cook until translucent, without gaining colour.

3 – Add the chicken, chickpeas and all the aromatic herbs to the pan. Let it cook over low heat until the chicken is ready. Finally, sprinkle with lemon juice.

4 – In the dish, serve with a poached egg and a slice of fried bread. Garnish with chopped fresh coriander or parsley and mint. Enjoy your food!
